CENTRAL CANAL RING.   Served amid marble furnishings and ceiling murals, Le Pêcheur's seafood (delivered fresh daily) is a special treat. And while the menu doesn't go overboard with culinary excess, it does ensure perfect preparation. Take, for example, tuna carpaccio, which gains silky richness with duck liver mousse; or sauteed scallops, which benefit from a dash of Sauternes. For all the recommendations it was too expensive and it was just good but not exceptional. I have had quite better meals and atmospheres for better prices.
