EASTERN CANAL RING. Owned and operated by British chef Jean Beddington – a favourite amongst local foodies – this small yet stylish establishment draws scores of discerning diners to watch her at work from the open kitchen. The regularly changing menus are creative and predominantly European imbued with Asian, with the occasional hint of her British heritage shining through. And her desserts are simply Jean-ius. The service here is also particularly pleasant, warm and efficient and, rather amazingly, the top-notch cusine won't burn a hole in your pocket.

FURTHER AFIELD. An excellent example of adaptive reuse, this breathtaking restaurant occupies what was once a water pumping station. The spacious building boasts arched windows, industrial detailing, and even some of the original equipment. The menu promises a host of great dishes, including grilled venison, fried sweetbreads, grilled swordfish or sea bass, beef burgundy, wiener schnitzel, roast quail, wild duck and lobster. Desserts ranging from fruit and cheese to chocolate and cream can be had as well. Affordable and inviting.

OLD CENTER / RED LIGHT DISTRICT. This exquisite restaurant garners praise time and time again from patrons and critics alike. Its refined interior overlooks the river and is, itself, dressed in crystal, linens, and delicate flowers. The menu more than follows suit. Celebrated dishes include grilled fish, veal, lobster, smoked eel, and whatever the kitchen finds intriguing. Desserts are lush as well, and the wine list, gracious service, and live music played on a grand piano heighten the genteel experience. Prix fixe menus available. Jackets required.

CENTRAL CANAL RING. Occupying a former coach house, this beautiful two-level restaurant now takes the name of 'Garden House,' an apt moniker given its manicured landscaping and floral displays. Its cuisine is no less appealing, coupling French intent with global inspiration. Roast duck, oysters, beef, grilled scallops, and other well-considered, comfort fare pull in upscale diners, and business lunches and special-occasion dinners are commonplace. Reserve early if you plan to dine in the gardens.

WATERFRONT. Set on the tip of a pier overlooking the IJ river, this intimate restaurant is a well-kept secret, thanks to its location behind Central Station. Dating from the 1930s, the structure is small, comprised of two rooms, and boasts candlelight and great views. The seasonally-adjusted fish and meat menu features dishes ranging from classical French to typically Dutch (and includes several vegetarian options). The chef isn't afraid to expand horizons with ingredients and preparation, so take in the surprises (and the quality) with a smile and a ready appetite. Ask for the room overlooking the water for the best ambiance. Kitchen closes at 11pm.

WESTERN CANAL RING / JORDAAN. The seductive curves of Art Nouveau style characterize this delightful restaurant, which gleams with soft lighting and polished surfaces. Outside, the juncture of two canals sets the scene for al fresco dining. To start a meal, you might consider ravioli stuffed with game mousse or rolled eggplant with Tallegio cheese. Main courses include grilled ox tongue, venison, steak, veal cutlet, pumpkin gnocchi, and suckling pig. Noisy at times, the much-frequented place also requests reservations.

OLD CENTER / RED LIGHT DISTRICT. This unusual restaurant, which also functions as a nightclub, is something of a novelty. Its menu changes weekly, depending on the chef's interests, and the interior also shifts to match the cuisine. Five-course menus are set, and a la carte options aren't available. Guests – many of whom work in art, fashion, music and the like – lounge about on beds (as is their wont) while they partake of the innovative cuisine. The experience also features live entertainment and DJs (Along with sister clubs in Rome and San Francisco, they are behind the successful Supperclub Lounge CDs.) Perfect for those who crave something a bit out of the ordinary.
