WESTERN CANAL RING / JORDAAN. Returning patrons applaud this delightful restaurant, which often books diners weeks in advance. In the intimate place, folks take in the capable cuisine of the Belgian-born chef while they relax amid traditional furnishings, indulging in carefully crafted dishes. Multi-course meals are an especial treat, particularly since they allow the kitchen an extended chance to shine and since they allow diners to experience a well-coordinated meal, either with or without wine. A bit pricey but great for special dinners.

WESTERN CANAL RING / JORDAAN. This intimate, clean-lined restaurant remains a well-known city presence, despite the departure of its long-term, Michelin-awarded chef/owner Jean Christophe Royer at the beginning of 2006. New joint owners are his former sommelier Ellen and French chef Jean-Joel. The quality hasn't skipped a beat, however, and regular patrons still flock here for its classic French cuisine. The menu throws up delights such as frog legs in a cream of mushrooms and sorrel, fried garlic and almonds and roasted challans duck with braised duck leg in a sauce of red port and vanilla and celeriac puree. Sublime wines, perfectly attentive service, and stylish surroundings all conspire to make this expensive venue a don't-miss experience.

WESTERN CANAL RING / JORDAAN. Upscale and sophisticated, this charming restaurant is top-notch for wonderful French cuisine. Patrons come from across the world to partake of the food, and the place maintains a sense of worldliness, no matter when you dine. The menu itself is a symphony of flavor and texture, boasting everything from veal and monkfish to pork and quail. Sauces, expectedly, are a welcome accompaniment, and the wine list guarantees an ideal pairing for anything you order. Reservations highly recommended.

Trimmed in dark woodwork and accented with farming implements, the interior of this charming restaurant is as inviting as its exterior, lit by green-tinged lantern light. The intimate place is perfect for a romantic dinner, and the gourmet French cuisine ensures that you'll dine in style. Lobster, duck, foie gras and game provide hints of the menu's treasures, and the restaurant is also known for its luscious fondues and superb wine list featuring 500 different wines. Although certain to add a few more euros to the bill, you'll be well-rewarded in culinary pleasure for the price you pay. Kitchen closes at 11pm.

OLD CENTER / RED LIGHT DISTRICT. Utterly charming, this Flemish-style bar-restaurant feels like your own personal discovery when you come across it, hiding from the world down a tiny alley discernible by a scattering of outdoor tables and a string of coloured light bulbs. Originally a coach house then a cigar factory, the characterful premises encompass a bar area and an adjoining restaurant with a glass roof and brasserie-style menu to be enjoyed for late breakfasts, lunches or romantic evenings. Kitchen closes at 11pm.

PLANTAGE. For special occasions, this superlative restaurant is without compare. An inviting dining room overlooking the river, excellent service, and cuisine that's been awarded by Michelin coalesce into absolute delight. The menu is classic French, and everything is individually prepared. Options include game, seafood, veal, lamb and more, all graced with incredible sauces and vegetable accompaniments. Prix fixe menus are also available, as are chef's table meals, and the wine list is excellent. Expensive but a must.

A study in red and gleaming hardwoods, this brasserie pulls in a lunchtime crowd of professionals, who take advantage of the expansive windows, well-stocked bar, and fantastic French cuisine. Owned and managed by chef Denise Mooy, the place has a reputation for sensuous fare such as lobster bisque, steak tartare, airy souffles, and game dishes. Dinner is also available and popular with a Concertgebouw public, Dutch celebrities and monied locals.

Its capable staff, accomplished menu, and attention to detail guarantee a pleasurable experience that often converts first-time diners to long-term patrons. Main dishes include pan-fried skate, roasted venison, braised lamb shank, and a wild mushroom tarte. Desserts are a veritable feast in and of themselves; try warm apple fondant with caramel sauce or perhaps a chocolate tart with ivory ice cream if you require proof.
