Zest is exactly what you'll get at this praise-worthy restaurant, which brings a modernist slant to everything from the interior to the cuisine. The menu offers dishes with Asian and Mediterranean flavors, although no culinary coffers escape the kitchen's raiding. The food has developed such a reputation that folks often revel in it over leisurely meals, sampling Thai curries, grilled lamb, a wealth of fish and seafood dishes, and deftly prepared vegetable courses. The wine list offers selections by the bottle and by the glass as well. A wonderful, intimate spot.

Signature restaurant of the stylish Blakes hotel, this enviable eatery melds urban and Asian aesthetics in a 17th century building. Its culinary stylings are just as eclectic. In a former bakery where natural materials add warmth to a black-and-white color scheme, diners are plied with foods that mix Asian, Continental, and Mediterranean flair. To wit: Foie gras soup tinged with coconut milk and red curry, sea bass with black squid-and-ginger sauce, seared tuna sushi, duck, fillet of veal, chilli-seared langoustines, and beef sirloin with green papaya salad. Careful service and flawless presentation render this chic boutique restaurant a must-do.

Trendy, color-punched decor, a hip social scene, great views of the Muntplein, and a cuisine classified as IMF (international modern freestyle) indicate to diners that they're in for something out of the ordinary. Transformed from a 1950s-era garage, this exciting eatery now boasts a sophisticated decor of banquettes and mirrors, ideal for its see-and-be-seen crowd of celebrities and political figures. Even the chef himself is an easily recognized TV personality. His cuisine relies heavily on French tradition, although it ventures into Asian, Dutch, and Italian territories as well. The glitzy environs are tempered by well-prepared dishes, including roast squab, Moroccan-spiced lamb, rotisserie chicken, rib-eye with béarnaise sauce, duck a l'orange, and a fresh catch of the day. Amsterdam may not seem like the most likely locale for Mexican fare, but Rose's proves otherwise. This popular eatery serves terrific south-of-the-border cuisine and dishes up a good measure of conviviality as well. Along with a host of expected favorites, including great fajitas, you'll find a number of specialties, such as pescado a la Veracruzana (fried fish in a sauce of onions, tomatoes, and olives) and borrego al chipotle (lamb stew flavored with smoky peppers).
