CENTRAL CANAL RING. Served amid marble furnishings and ceiling murals, Le Pêcheur's seafood (delivered fresh daily) is a special treat. And while the menu doesn't go overboard with culinary excess, it does ensure perfect preparation. Take, for example, tuna carpaccio, which gains silky richness with duck liver mousse; or sauteed scallops, which benefit from a dash of Sauternes. Lobster is also available, and daily specials and prix fixe menus further expand the options. Outdoor garden dining is sublime on warm evenings.

OLD CENTER / RED LIGHT DISTRICT. If you're in the mood for convivial atmosphere and some of the best seafood in town, Lucius will more than deliver. This appealing restaurant garners well-deserved praise for its multitude of dishes, including fresh shellfish, lobster, and Dover sole. An awe-inspiring shellfish plate beckons to hearty appetites, and set menus provide three courses of affordable delight. Other representative fare includes Scottish salmon, grilled butterfish, steamed lemon sole, French and Dutch oysters, and a mixed fish grill.

FURTHER AFIELD. Striking, black-and-white-tiled floors and ambient lighting add drama to this fashionable restaurant, which has a contemporary flair and a way with seafood. Inspiration culled from around the world colors calamari salad, marinated salmon with roast beets, tempura prawns and escargots, pan-fried mahi mahi, and almond-herb crusted salmon. Other options include boiled lobster, grilled tuna, bouillabaisse with Gruyère, and even sautéed beef tenderloin for the uninitiated. An outdoor dining terrace and chef's menus are also available. Its location opposite the RAI convention center make it popular with business folk.

EASTERN CANAL RING. Providing ample breathing space after the bustling Rembrandtplein nearby, this bright sushi restaurant located across from the River Amstel is a perpetual delight. Diners can choose to sit on tables or take center-stage on the oval counter where a conveyor belt revolves plates filled with the fresh creations of the chefs working in the middle (they also whip up additional hot dishes such as pork and garlic dumplings and daily-changing grill specialties). The color of the plates denotes the price of each dish: when you're finished, stack them up for when it comes to pay your bill. Douse the wasabi-induced burns with Japanese beer, such as Sapporo, Kirin or Ashahi. Tip: a super place for an instant bite after a trip to the floating flower market or after watching a movie at the venerable Tuschinski.
