WESTERN CANAL RING / JORDAAN. Upscale and sophisticated, this charming restaurant is top-notch for wonderful French cuisine. Patrons come from across the world to partake of the food, and the place maintains a sense of worldliness, no matter when you dine. The menu itself is a symphony of flavor and texture, boasting everything from veal and monkfish to pork and quail. Sauces, expectedly, are a welcome accompaniment, and the wine list guarantees an ideal pairing for anything you order. Reservations highly recommended.

OLD CENTER / RED LIGHT DISTRICT. Eminently romantic, this elegant restaurant (whose name translates as the "Silver Mirror") occupies two canal houses dating from 1614. Beautifully decorated rooms welcome diners to relax amid candlelight and history and partake of innovative Dutch cuisine. The menu features fillet of venison, filled duck's breast with morels, lamb, grilled beef, and a variety of fish entrees. Impeccable wines and fixed-price menus add to the experience. Outdoor dining is available when the weather's mild.

The clean-lined interior ensures that food, more than decor, receives the attention it's due. Attentive service, an accomplished kitchen, and an outdoor terrace appeal to those who stop in for the first time and are ready proof for regulars that Blauw aan de Wal is always ideal for a meal that's large on quiet, quality and charm. Although folks debate whether the restaurant is named for the five canal houses it occupies or for a family of brothers named Flie, it's certain that the only insects you'll come across are those decorating the signage. In fact, this celebrated restaurant is one of the city's favorites and is ideal for both romantic dinners and business occasions. It has also seen its share of celebrities over the decades, including numerous Hollywood figures. The candlelit venue features dark woods, regional antiques, and even Rembrandt etchings. The menu shakes up traditional Dutch cuisine, offering roast duck breast, veal sirloin, lamb, suckling pig, grilled fish, and a host of dishes that capitalize on fresh, local ingredients. Seasonal, chef's, and vegetarian menus are available as well.

Dim and atmospheric, the place specializes in continental cuisine and benefits from Dutch ingredients. Fish and game, in fact, occupy places of prominence on the menu, along with beef, veal, and rabbit.
