GREATER ORANJESTAD.   Mango's specializes in the sunny cuisine of the islands: tropical fruits, coconut and zesty spices are used in virtually every dish. Menu highlights include Caribbean marinated chicken with port wine sauce, pan-fried apple rings and toasted almonds; butter sautéed shrimp with coconut cream and fresh shredded coconut and a splash of Malibu rum; Caribbean marinated pork tenderloin with cranberry sauce and raisins; catch of the day Aruban-Creole style or with garlic butter sauce.
