NORTHWEST COAST. Aqua Grill is a contemporary restaurant with an open kitchen and the island's largest raw bar. Start with oysters or clams on the half shell, seared tuna sashimi or ceviche. Seafood is the name of the game here, and you can choose virtually any preparation: fried, grilled over a wood fire, broiled, poached, stuffed and baked...the list goes on. The cioppino is particularly tasty, but if you're not a seafood eater, there are also a handful of other choices (steak and pasta, mostly). There's an array of specialty coffee drinks which will make a nice, light ending to your meal, but the delectable desserts are all made in-house.

NORTHWEST COAST. This seafood stop is a must for visitors and locals. The nautically decorated dining room complements the bill of fare. Succulent lobster Thermidor, flaky barracuda and a delicious crabmeat cocktail are special favorites. Those preferring turf to surf will be pleased with the pork cutlets served with sausage, sauerkraut and potatoes, or the juicy beef tenderloin. Buccaneer does not accept reservations, so if you want a coveted seat next to the 5000-gallon aquarium, arrive early!

GREATER ORANJESTAD. Traditionally prepared, super-fresh seafood is the draw here – the owners catch their own every day. Broiled Caribbean lobster is always a solid choice, but the fresh catch of the day, prepared to your liking, is really the standout. Whether you opt for Aruban style (pan-fried with a Creole sauce), a la Meuniere (dipped in egg batter and sautéed with white wine and lemon), or deep-fried, your selection will arrive with sides of rice or potato, fresh steamed veggies and pan bati, the local cornbread. Landlubbers will appreciate the steak and chicken options, too.

SAVANETA. Want to dine on the beach with a beautiful view of the sunset? Then make reservations at Flying Fishbone and be prepared to get sand in your shoes! More than half of this little restaurant's tables are literally on the beach, though there are a few tables inside as well. The menu here changes each day to keep pace with the freshest catches. Shrimp and lobster combos, Wahoo in pesto cream sauce, and lobster chowder are local favorites. For dessert save room for the chocolate ice cream served with spiced pineapple or the mango ice cream doused in fresh mango compote.

GREATER ORANJESTAD. Casual and convenient, La Peteit Café is especially popular among hungry tourists. For fun people watching, sit upstairs on the covered porch, which overlooks the street. The food here is straightforward and well-prepared – seafood dishes tend to be quite good. The high point of a meal here is the novelty of an "on the stone" dinner. Meat and seafood is lightly grilled in the kitchen then served on a superheated stone which continues to cook the food at your table. A word to the wise: if you plan to have lunch here, avoid "on the stone" options – the heat from the stone combined with the ambient temperature and humidity is enough to diminish your appetite!

NORTHWEST COAST. What a setting! Designed to recall an ancient stone building, the Hyatt's fine dining restaurant has ambience to spare, with abundant tropical foliage, waterfalls and fountains, and a lagoon complete with a gorgeous pair of black swans. Add in an Aruban sunset and this is about as romantic a place as you'll ever see. At dinner, the menu focuses on Spanish-influenced Continental cuisine, with an emphasis on fresh seafood. Sunday brunch is an amazing production, with stations devoted to cooked-to-order eggs, Belgian waffles, seafood, sushi, roasted meats, pasta, fruits and salads, donuts and desserts, and make-your-own ice cream sundaes. It's achieved legendary status, so make reservations well in advance!

GREATER ORANJESTAD. Casual and friendly, the Turtle's Nest is owned by the same folks who brought us the Waterfront Crabhouse. It's quite popular with families because of the super kids menu. The regular (adult!) menu is consistent and good, offering affordable standbys such as shrimp cocktail, grilled steaks and burgers, and a handful of tasty salads and sandwiches. The house specialty, Seafood Linguini Fra Diavola, is quite good, but the daily fresh seafood specials tend to be exemplary, even inspired on occasion. The Turtle's Nest is also an especially solid choice for the budget conscious.

GREATER ORANJESTAD. As the name suggests, this seafood restaurants specializes in crab – garlic crab, Alaskan crab legs and soft-shell crabs are just a few of your options. Other tempting dishes are the stuffed clams, Cajun grilled shrimp, and a wonderful Black Angus filet mignon for the meat lover. The chef is a grilling master, so the fish and meats are perfectly prepared. Dine outdoors on the terrace or inside amidst murals of undersea life.
