CONGRESS AVENUE.   The ambience at Roaring Fork can best be described as "upscale cowboy." The menu follows suit, with Southwestern, Mexican, and Southern influences. A fun starter is the New Mexico Fondue Pot, accompanied by little lamb chops, chile-pecan bread, and butternut squash. Main courses include mustard-rubbed pork tenderloin with green chile mac and cheese, and grilled beef tenderloin with mashed potatoes and ancho-corn butter. If you happen to be sitting at the bar, you'll be offered a plate of the most fabulous homemade beef jerky, unlike anything you've ever tried before. It's quite addictive!

This is cowboy cooking dressed in a suit and tie. You can't miss with dishes like Oven Baked Kettle of Green Chile Pork Stew With Buttered Tortillas or Grilled, Giant Jalapeno Shrimp With Spinach and Portabella Enchiladas. (from Southern Living)
