Cozy and refined, this lovely restaurant transforms local ingredients into fabulous entrees that highlight the freshness and flavor of the Rockies. The open kitchen allows guests glimpses of the capable staff creating such entrees as wild mushroom crusted rack of Alberta lamb, oven roasted guinea hen, and grilled Arctic char. Alberta beef, duck, quail, veal and venison are also excellent choices. The menu, which changes seasonally, consistently guarantees a spectacular meal, especially when dishes are paired with vintages from the terrific wine list. We had breakfast every morning. There was enough variation to keep us happy for a week. The food was excellent and moderately priced. We had one supper at the Evergreen. It was superb for both people attending and definitely not run of the mill food.
