Refined and elegant, this distinguished restaurant pampers diners with fantastic regional cuisine and the soothing strains of a harp. The menu takes Canada's best ingredients and produces such dishes as roasted young partridge with truffles, pecan crusted caribou, and cedar-roasted Alaskan sable fish. Appetizers are just as tempting: terrine of Quebec foie gras, pheasant consomme, and roasted loin of rabbit with pancetta. The prix fixe menu changes seasonally, and a tasting menu with five courses is revised weekly. A terrific wine list and a selection of single malt scotches complement the cuisine beautifully.

Attractive, contemporary-rustic décor is the ideal counterpart to Bison Mountain Bistro's fabulous Canadian cuisine. The bison burger, topped with Saskatoon berry chutney, comté and house-made smoked tomato ketchup, is scrumptious. Interesting wood-fired pizzas are a worthy choice – try one with local Valbella bacon, tomatoes, arugula and gouda. Raclette, a mountain staple, is made here with three cheeses and accompanied by smoked bison, bündnerfleisch, cornichons, baby potatoes and steamed veggies. At brunch, the Benedicts (all served on a cheese-herb biscuit) are awesome – for something more unusual, opt for the duck confit and chèvre version. The lounge is popular for pre- and post-dinner drinks, and don't miss the General Store, stocked with fine cheeses, house-made condiments and great prepared meals.

Lauded for its spectacular cuisine and carefully-chosen wine list, the BML makes terrific food and great service look easy. It's no mean task, however, to remain at the top, and the restaurant works feverishly to surmount expectations. The interior mixes rustic architecture with refined details; the cuisine adds to the excellence. Main courses, which feature Rocky Mountain fish and game, include medallions of ranch elk with sour cherry compote, seared halibut on black rice, and roasted pork tenderloin with morel mushroom cream sauce. Chicken, duck, caribou, lamb and salmon also join the list of options. An ideal choice for an evening out.

Since 1990, Chez Francois, located adjacent to the Canmore Mountain Lodge, has served some of the finest French cuisine in the region. Chef/owner Jean-Francois Gouin prepares classic dishes such as Feuillette d'Escargots, Coquille Saint-Jacques, duck a l'orange, and Filet de Veau Forestiere (veal with mushroom sauce), along with more modern selections like ostrich tenderloin with red currant sauce. The restaurant's elegant lounge is quite a popular spot for enjoying something from the comprehensive list.

Multiple awards, including Wine Spectator's Best of Award of Excellence and the AAA/CAA Five Diamond award, bespeak Eden's high standards. Service and décor are flawless – even the views are magnificent. The restaurant's refined French cuisine is perhaps best appreciated through a multi-course meal. Menus change frequently, but feature ingredients like Beluga and Sevruga caviar, Kobe beef, Canadian bison, and Alaskan king crab and dishes such as truffle risotto, duck with seared fois gras and bitter chocolate jus, and beef tenderloin with veal red wine reduction. Wine pairings (drawing from a 17,000 bottle cellar) are available as well.

Cozy and refined, this lovely restaurant transforms local ingredients into fabulous entrees that highlight the freshness and flavor of the Rockies. The open kitchen allows guests glimpses of the capable staff creating such entrees as wild mushroom crusted rack of Alberta lamb, oven roasted guinea hen, and grilled Arctic char. Alberta beef, duck, quail, veal and venison are also excellent choices. The menu, which changes seasonally, consistently guarantees a spectacular meal, especially when dishes are paired with vintages from the terrific wine list. After dinner drinks are also available, and breakfast is served daily.

"Finer dining" is the goal here, and Fuze has certainly mastered it. The award-winning establishment serves a fabulously eclectic, internationally inspired menu. You might start with the signature roasted tomato soup garnished with bacon, pesto cream and olive oil, or with a "trio of tartare" with scallops, tuna and salmon. Main courses range from charbroiled Alberta beef tenderloin with foie gras, braised oxtail and truffle-scented madeira sauce, to Thai style shellfish risotto, to Indian barbecued chicken with couscous salad. The patio and lounge menu is shorter and more casual with choices such as tempura fried sushi rolls, chipotle wings, and fried artichokes with aioli. Plenty of vegetarian options, too.

Consistently awarded for its ambience and fine cuisine, this long-established gem is one of the area's best. The elegant, second-story restaurant envelops diners in luxury and attentive service, adding to the already-strong appeal of the food. Diners may choose from prix fixe or a la carte menus, both of which are incredible. Representative dishes include roasted chicken breast stuffed with truffle paste, slow-braised caribou, roasted rack of lamb, and seafood gratin with scallops, mussels, shrimp and Alaskan king crab. The wine list features hundreds of vintages, and the staff are happy to offer appropriate selections for each dish. Jacket and tie are optional, but reservations are necessary.

Full of local character, this wonderful restaurant is a fashionable study in wood, stone, leather, copper and wrought iron. Dining areas and bars upstairs and down accommodate a multitude of guests, who come for the great food, beer and spirits. Representative dishes include flat bread pizzas and lamb burgers; you'll also find cider braised duck, grilled venison loin, beef tenderloin, and roasted breast of chicken. Seafood is available as well, as is a substantial wine list. Patrons frequently come for a good meal and then hang out drinking and socializing later in the evening. An upscale neighborhood bar.

No matter what time of day you come to Melissa's, you'll be warmly greeted and made to feel at home. The restaurant, housed in a circa-1928 building, resembles a chalet on the outside and a log cabin on the inside. It's also a local institution and a great place to meet friends. The Canadian cuisine makes the most of local ingredients, and you'll find a selection of Alberta steaks, salmon, trout, ribs, chicken and pork. Lighter appetites will be pleased by the handmade burgers, deep dish pizzas and pasta options. In the evenings, locals gather at the upstairs bar and watch TV or play pool while they drink. An outside patio makes for pleasant dining when the weather's mild.
