French and Italian cuisines, prepared with local, organic and sustainably produced ingredients, earn raves for Canmore's Quarry Bistro. Standouts include house-made lemon-ricotta ravioli with chanterelles and sage brown butter sauce, braised rabbit and pea risotto, cassoulet, and shareable platters of charcuterie and artisan cheeses. The buffalo burgers are good too, if you want something a bit simpler. The restaurant sports an attractive open beam dining room with skylights and big windows, plus a lovely patio with mountain views.
