EDITOR REVIEW: ST. PETER PARISH. Cobblers Cove is internationally recognized as one of the finest hotels in the Caribbean, so it follows that their restaurant should be one of the finest as well. The Terrace enjoys a sublime location right on the edge of the beach, and it's the perfect setting in which to enjoy chef Neil Hitchen's refined cooking. Chicken liver and foie gras parfait is an indulgent appetizer, as is the unique smoked haddock and leek risotto with a warm poached egg and asparagus velouté. Standouts among the main courses include shrimp and scallops over linguini with lemongrass-chive sauce, and filet of beef with horseradish crust with sweet potato puree. Fridays feature a special "Seafood and Caviar" menu – if you're a fan of all things from the ocean it is one meal you won't want to miss. |
