BATON ROUGE.   Thanks to Cajun flair, this restaurant offers an innovative twist on the standard seafood establishment. The chef-owner also operates a seafood distribution company, and just-caught ingredients are used unfailingly. The menu, for example, includes fried oysters, stone crab claws, barbecued shrimp, fish filet topped with a fried soft-shell crab, and char-grilled, bacon-wrapped yellow fin tuna.
