BEAVER CREEK. This truly exceptional experience begins with your party enjoying a 20-minute, moonlit sleigh ride (or a horse-drawn wagon ride during the warmer months) from the base of Centennial Lift to a rustic-yet-modernized cabin located high on the mountain. Inside, you'll find a cozy – even romantic – dining space marked by oil-burning lamps, ceiling-high windows, tables appointed with white linens and, perhaps, a crackling fire. Beano's features prix fixe dinners only, and the menu includes such frontier-inspired fare as wood-grilled venison with Fontina cheese-potato tart, Colorado lamb loin with creamed leaks and roasted shitakes, and pan-seared breast Muscovy with baby bok choy. Reservations are a must.

AVON. Open for dinner in the winter and for private parties only during the summer season, SaddleRidge is one of the resort area's most celebrated restaurants, drawing critical praise for a menu that includes everything from roasted wild boar chops with corn bread stuffing to fillet of red trout with purple potato salad and lemon-brown butter sauce. What's more, the interior pays striking homage to the region's colorful history, with its high, vaulted ceilings, Native American artifacts, and Old West curiosities that include a saddle belonging to Buffalo Bill Cody. An outstanding selection of wines and first-rate service round out this unique experience. Reservations are strongly encouraged.

BEAVER CREEK. One of Beaver Creek's more robust dining choices, Splendido perennially impresses with its Continental opulence – imported Italian linens, comfortable furnishings, impressive Chagall prints, and walls painted in burnt orange, yellow, and patina green. The menu, meanwhile, reveals a certain American-by-way-of-Europe inventiveness thanks to dishes such as Dakota buffalo filet mignon with crème fraiche and chive potatoes, wood oven-roasted Maine lobster with cous cous and lemon hollandaise sauce, and ginger-roasted Barramundi fillet with lemongrass broth and soba noodles.
