Housed in Edwards Plaza, this festively-decorated Mexican restaurant can help spice up your trip, whether its south of the border fare you're yearning for or a potent margarita (theirs are billed as the best in Vail Valley). From their signature chicken enchiladas in white jalapeño sauce to the carne adovada, chorizo, or egg and potato Grandé Burrito smothered in green chile and melted cheese, Fiestas serves up all the traditional favorites and is a great choice for lunch or dinner. Rounding out the tasty options are handmade tamales and shrimp rellenos – caliente to be sure!

BEAVER CREEK. The Belgian and French culinary arts step onto center stage in this lovely old farmhouse restaurant, built as a private residence way back in the 1890s. Elegant-yet-rustic European-inspired decor and a kitchen whose flair for the dramatic knows few bounds combine to make Mirabelle one of Beaver Creek's most desired dining alternatives. Indeed, the menu changes seasonally and always manages to regale patrons with dishes like beef tenderloin with red wine reduction and pommes pallaisson, roasted elk medallions with pear poached in pomerol and potato "Nico" gratin, and oven-roasted halibut with herb crust, capers, asparagus, and saffron-olive oil infusion. Reservations are a must.

EDWARDS. Francophiles heap high praise at the door of this friendly, café-style eatery, located in Edwards' Riverwalk area just across from the theater. Whether it's morning fare and gourmet coffee you crave or a cozy setting in which to enjoy a pre-show meal of beef burgundy, Parmesan and sun-dried tomato polenta, or pan-seared steak au poivre, you're sure to find something to suit your palate no matter how discriminating it purports to be. Of course, you'll want to save room for one their homemade desserts, as they truly distinguish French Press from all the pretenders. Reservations are encouraged but not required.

BEAVER CREEK. Located adjacent to the ice rink and within easy walking distance from the Vilar Center, Toscanini is one of Beaver Creek's favorite places for wood-fired pizzas and delicious, homestyle Italian pastas. The dining experience starts with an order of fresh-baked bread accompanied by exotic dipping oils – a great way to whet the appetite, to be sure – and continues with traditional favorites like gnocchi with San Danielle prosciutto or grilled specialties like Salmon Creek pork chop with caramelized onion mashed potatoes. In addition to the great food, the place also impresses with its wine list, which has received approving nods from the likes of "Wine Spectator." Reservations are strongly encouraged.
