WARWICK PARISH.   Although it bills itself as a "light steak house," Blu is much more. The Belmont Hills Golf Club restaurant does indeed feature steaks, and good ones at that, but the variety of alternatives is refreshing – this is no stodgy, old-fashioned steak place. Many of the dishes have a touch of the American Southwest with ingredients like tomatillos, jalapenos, chipotles, fresh salsas and black beans, but you'll also find Asian, Italian and Bermudian flavors. Start with shrimp ceviche, then try cilantro pesto black cod, macadamia-crusted wild salmon with pineapple-poblano salsa, or an ancho-coffee rubbed certified Angus filet mignon. Excellent, and growing, wine list.
