HILO.   You might have to do a little searching to find this Big Island sushi gem, but once you're here, you'll keep coming back. From start to finish, the food is authentic, inventive and delicious. Start off with the special saimin or the chicken and beef sticks, and then head on to the sizzling salmon or the seaweed won ton min. Be sure to save room for the chocolate mochi at the end of your meal. We tried two dishes. The saimin soup was not hot enough and very salty, saimin was hard. The other dish was fried chow fun. It's the worst chow fun we had -- dry and not much flavor. Our seat was away from the counter and no waitress could really see us. We had to go to the counter ourselves for asking question, ordering our food, and paying our bill.
