DELRAY BEACH.   It's not often that diners can treat themselves to Scandinavian cuisine, particularly in the South. That's why this family-run establishment is such a welcome presence. The small, charming dining room, set like a comfortable parlor with its photographs, antiques, and accessories, surrounds patrons with a warm ambience. It's just right for the satisfying foods served. Meals begin with a cold smorgasbord, complete with gravlax, pickled herring, cucumber salad, mustard-dressed mushrooms, and curried chicken salad. Entrees, then, include rack of lamb, wiener schnitzel, roast duck, pecan-crusted trout, and calves' liver. Accompanied by great vegetable side dishes, they're a substantial meal.
