DELRAY BEACH. Head and shoulders above the usual sushi spots, Kyoto plies diners with an extensive menu, a lively atmosphere and great ambience. The soaring space accommodates table dining as well as perches at the sushi bar, and guests revel in the place's sense of humor. The volcano roll comes with broiled conch atop a California roll, while the Delray roll features eel, roasted garlic and steamed spinach. If you'd rather dig into a large entree, look to miso sea bass, Mandarin duck, NY steak or nori-wrapped salmon for inspiration. A good selection of sakes (hot and chilled) is available, and the staff will happily help you pair them with your entree. A full bar and outdoor dining only add to the experience.

BOCA RATON. Tiny and expensive, Johannes caters to guests with deep pocketbooks and those celebrating special occasions. Austrian chef Johannes employs only top ingredients and even raises some of them. The quality of the cuisine is evident. Impeccable presentation and flavor are hallmarks too, as you'll realize after sampling cocoa-dusted venison, mirin-lacquered squab, slow-grilled Texas antelope, or blue marlin in a pistachio crust. Everything on the menu is homemade, and top-notch service matches the sublime cuisine. While you can order a la carte, a four-course, prix fixe option is available, as is the 19-part omakase, a carefully orchestrated succession of dishes that exhibits the chef's well-considered talents.

BOCA RATON. Sporting a tasteful, tropical theme, this restaurant pays due homage to its namesake, an edenic beach in Hawaii. The cuisine itself features a number of Pacific Rim-inspired entrees, including soy and sesame-glazed swordfish, a crowd favorite. Crab cakes, macadamia-crusted snapper, and a chunky, fragrant cioppino are also available, and seafood appears frequently in appetizers. Meat-eating patrons appreciate lamb chops, chicken, steaks, and the popular grilled veal chop. Each entree is accompanied by a selection of side dishes, which include creamed spinach, asparagus, and the like. Given the restaurant's perennial popularity, waits are not unlikely, so plan accordingly.

BOCA RATON. This fashionable bistro has established itself as one of Boca's favorite dining and nighttime spots, thanks to a lovely ambience, fantastic cuisine, and an ideal location at Mizner Park. In the spacious dining room, with its golden-hued woodwork, patrons sample such dandies as snapper with Thai chili garlic sauce, chimichurri skirt steak and Moroccan spiced rack of lamb. The oyster bar proffers the best in raw and steamed shellfish, and the excellent wine cellar is stocked with domestic and European vintages. Live musicians perform several nights each week, and a great bar delivers gregarious patrons, wonderful scotches, and GiGi's own microbrewed ale. Perfect for an evening meal and more.
