DOWNTOWN. Since December 7, 1941 (Pearl Harbor Day), Bove's has been as synonymous with Vermont as maple syrup, Lake Champlain, and the Green Mountains. Famous for traditional, red-sauce spaghetti, this downtowner looks to have changed little over the years, and upholstered booths and subdued lighting still create the same sense of intimacy found since, say, 1950 or so. Much to the delight of regulars, the menu, too, remains unchanged and continues to feature a handful of homemade Italian-American favorites like ravioli with meatballs, spaghetti with roasted garlic sauce, lasagna trays, and manicotti.
