DOWNTOWN. Since December 7, 1941 (Pearl Harbor Day), Bove's has been as synonymous with Vermont as maple syrup, Lake Champlain, and the Green Mountains. Famous for traditional, red-sauce spaghetti, this downtowner looks to have changed little over the years, and upholstered booths and subdued lighting still create the same sense of intimacy found since, say, 1950 or so. Much to the delight of regulars, the menu, too, remains unchanged and continues to feature a handful of homemade Italian-American favorites like ravioli with meatballs, spaghetti with roasted garlic sauce, lasagna trays, and manicotti. Folks swear by Bove's sauces, which are also available jarred and ready to take home.

SHELBURNE. One of Greater Burlington's better Chinese restaurants, this Shelburner serves up a variety of Szechuan, Hunan, and Mandarin specialties as well as a few Vietnamese dishes for good measure. The atmosphere is casual and without pretense, and patrons can always rely on suggestions from the friendly staff should they have trouble deciding.

DOWNTOWN. One of Burlington's more interesting culinary forays, Five Spice has a local following of young folks with adventurous palates – thanks to a potpourri of Asian fare (dishes range from Thai to Chinese and Indonesian). Featured entrees include spectacularly spicy Burmese Mountain Ruby Chicken with stir-fried sweet red peppers and zucchini, fabulous Five Spice Shrimp with steamed veggies, and marinated Vietnamese Steak with shiitakes, flavored with fish sauce, garlic, and chilies. Dinner reservations are suggested, especially on weekends. Take-out is available.

The Queen City's premiere place for traditional Indian cuisine, this Colchester Avenue eatery instantly captivates with its alluring aromas. Entrees are prepared in a tandoor, a clay pit oven heated by burning charcoal. Sample dishes include the flavorful Reshimi Kabab (marinated barbecued chicken), Tandoori Pork Chops with grilled onions, and Paneer Tikka (herb-seasoned broiled cheese). A variety of chicken, seafood, and vegetable curries is also available. Of course, an order of naan is a must – many consider it Vermont's best.

SOUTH BURLINGTON. A delightful fish pond enhances the scene at this Japanese eatery, where diners watch dinner prepared at the table with an open flame. Offerings include various combinations of veggies, chicken, seafood and beef served with soup, salad and fried rice or noodles. In addition to the "grill," the menu features tempura and teriyaki dishes, and the cozy sushi bar offers a pleasing assortment.

Hale and hearty Mediterranean fare has earned this downtown bistro a special place in the hearts of savvy locals, who also give Leunig's high marks for charming decor, an attractive marble bar, and a primo location (on the corner of Church and College). The menu features a wide range of fare, from Tuscan-inspired flatbread pizza and pasta dishes to seasonal specialties like Vermont-raised pork and lamb. Sidewalk dining is available for those who want to make sure they're part of the scene.

DOWNTOWN. This charming Main Street restaurant and bakeshop brings Parisian flavor to downtown Burlington. It features a tantalizing array of fresh-baked pastries, breads, cream puffs, éclairs, truffles, and sheet cakes. Patrons stop by early in the morning and settle in for a bite of breakfast at one of the cafe-style tables or opt for a quick sandwich, salad, or bowl of homemade soup at lunch. Most also order a "to-go" treat before they head back to work – just a sugary fix to help make it through the day.

DOWNTOWN. One of Burlington's (perhaps even Vermont's) oldest Japanese restaurants, Sakura seems an odd fit for downtown Burlington. In fact, its sleek exterior and Eastern-inspired minimalist interior pose an interesting contrast to the redbrick buildings that flank it. Still, many regard it as the place that introduced the town to raw fish, and the restaurant has carved a fine niche for itself in local culinary circles, serving up excellent offerings of sushi, sashimi, tempura, and sukiyaki. Patrons may saddle up to the authentic sushi bar at the rear or take a table that looks out over the Church Street Market.

DOWNTOWN. This Burlington institution has been serving terrific Italian fare for more than a decade now. They specialize in brilliant pizzas prepared in a wood-burning oven, tantalizing homemade pastas, and grilled chicken and fish plates. In the warmer months, Three Tomatoes' outdoor dining area is a popular place to see and be seen, and the Italian-heavy wine list always adds just the right complement to a romantic meal.
