CENTRO. Casa Carmencita was established in 1840, and it still serves some of the best food around. You can choose from menu items such as filet of pork, mollusks with port, or codfish garlic. They are famous for their special servings of their own version of Cocido every Thursday. It was once poet Federico Garcia Lorca's favorite restaurant. METRO: Chueca.

CENTRO. Casa Labra has special historical significance because the Spanish Socialist party was established here in 1879. When you enter, you'll get the impression that the dark wood interior and Spanish-style décor appears to have changed very little over the past 100 or so years, and this just adds to the tavern's charm. Even today, the restaurant still maintains a special place in the hearts and of Madrid's locals and visitors. In addition, their stomachs do not forget its great tapas menu and traditional Spanish cuisine that features cod fritters. METRO: Sol.

CENTRO. This classy, stand-up snack bar has an antique décor that has survived since its establishment in 1839. This bar is famous for its inexpensive selections, including some delicious tapas. You must try the croquettes, and if you happen to be in the area on a chilly day, Lhardy's soup is the perfect remedy for the cold. METRO: Sol

ECHEGARAY. Once run by gypsies, Los Gabrieles attracts a large group of hip young adults. Menu features delectable tapas choices served by an excellent waitstaff. The walls are decorated with ornate tiles, depicting scenes such as Velázquez's "Los Borrachos." Business casual attire. METRO: Sevilla

CENTRO. This bar will take you back in time and away from the twenty-first century. Hand-carved stools provide the seating, and sausages and wheat hang from the ceiling overhead. You can sample several different treats, including boiled ham, chorizo (sausage of red peppers and pork), and broad beans with Spanish ham. Taberna Toscana is famous for its Morcilla (black sausage).
