CENTRO. Gula Gula (which translates as Greedy Greedy) is one of the most notorious restaurants in Madrid. Bodybuilder waiters prance about in tiny leather shorts and nightly cabaret shows feature drag queens and bawdy comedians. It's as camp as Christmas, but well worth a look, even if the food does play second fiddle to the theatricals. Still, there's a very reasonably priced buffet of creative Spanish and Mediterranean food at lunch. At dinner, plunder the cold buffet , then order a hot main dish afterwards, if you wish. Reservations recommended for evening meals, especially at weekends. Metro: Sevilla

CENTRO. Carmencita, which was founded in 1840 and authentically restored, reflects true Spanish charm in intricate tile work and 19th century detailing. Long a gathering spot for Madrid's well known, Carmencita serves traditional Basque fare, including escalope of veal, filet of pork, codfish with garlic, and a house specialty called "cocido madrileno," which is a delicious regional stew. Reservations are recommended.
