MOUNT PLEASANT. The Maverick restaurant group has "the knack." At their Old Village Post House, set in an elegantly restored 19th century building with an upscale dining room plus a casual tavern, patrons feast on fabulous Lowcountry dishes that change with the seasons and the chef's whims. Their signature oyster stew is a hearty concoction that's sure to please, as is that old Southern standby, shrimp and grits. Crab cakes and grilled steaks (especially with bourbon-mustard sauce) are excellent; service and wine are top-notch as well.

DOWNTOWN. This very modern and elegant restaurant has been a favorite of both locals and visitors for years. The friendly staff serves up sophisticated and sumptuous Southern dishes and desserts that are far too good to pass up. There's a vibrant bar scene here, so plan on coming early and, perhaps, staying late.

DOWNTOWN. At this contemporary bistro and bar, diners may opt for traditional table seating or mingle with other guests at a community table. Flexibility and innovation also characterize the kitchen, which offers a bar menu and small plates in addition to its fabulous main courses. An artisanal cheese plate or sweet vidalia onion tart provides the perfect introduction to FIG's cuisine, and you won't want to stop there. For dinner, spring for the braised lamb with potato goat cheese gratin and morels, or the delicate triggerfish with green olive salsa verde and fennel salad. Sophisticated wine list.

DOWNTOWN. Located in the elegant Charleston Place Hotel, The Charleston Grill has won numerous awards for the sophisticated regional cuisine that they provide their guests. The leather chairs and dark paneling give this place the look and feel of the quintessential gentlemen's club. Partake in such New South favorites as lobster tempura over lemon grits, salad with spicy fried oysters, and beef medallions over whipped black-eyed peas in a roasted pecan and shiitake mushroom sauce. Choose your favorite label off the extensive wine list, and you are all set.

SUMMERVILLE. Exceptional cuisine is the hallmark of this elegant resort restaurant, and awards rain constantly upon its chef and kitchen. Regional dishes are fashioned from premium, local ingredients, and sumptuous fare includes venison with white corn-goat cheese pudding, rack of lamb with Kalamata olive sauce, and butter-poached walleye with spring succotash. Tasting menus are popular, and a la carte options are available as well. A great wine list, impeccable service, and a gracious interior solidify the restaurant's renowned reputation. Multi-course prix fixe dinner menus $54-115; Tasting menus $78; Chef's table $150.

DOWNTOWN. Every time you dine here, the food gets better and better! Velvet-paneled walls and oil paintings set off the lavish décor, and antique lamps light each elegant table. Chef Robert Carter has been applauded in national publications for his innovative Lowcountry cuisine. It's ably delivered by a staff dedicated to incomparable service. Chef Carter claims that dessert is the very best part of a meal, and with such delights as lemon tart accompanied by lemon sorbet, lemon crisps, and candied lemon, or a slice of heavenly coconut cake, who can argue otherwise?

DOWNTOWN. Owner-Chef Robert Dickson is all the rave at this Italian eatery. Not only does he prepare some of the best Nouvelle Italian cuisine you've ever tasted, but he also entertains you throughout the night by belting out some of Broadway's best-loved show tunes. The prix fixe menu, about $80 for five courses, may include a warm scallop mousse or roasted breast of duckling with crimini mushroom risotto. The dessert plate is sumptious.

DOWNTOWN. Elegantly adorned with dark-wood detailing and washed by sunlight, this refined establishment is a perfect complement to the Market Pavilion's gracious hospitality. The restaurant's signature is USDA prime beef, perfectly and simply prepared. Kobe beef or tuna tartare are delectable, as is blue crab chowder. Steaks are terrific unadorned, or you can try one that boasts foie gras or roquefort and applewood bacon. Pork, veal, and lamb chops also please, as do delicious seafood dishes. Great French and American wines.

DOWNTOWN. From the creators of Peninsula Grill comes this exquisite gourmet seafood restaurant. Hank's is located off Market, in a hundred-year-old, refurbished warehouse, complete with pine paneling and Italian leather-upholstered booths. Have a pre- or post-dinner cocktail at the expansive bar. This place is not to be missed.

DOWNTOWN. One of Charleston's best-kept secrets, Circa 1886 prepares some of the best cuisine in town. Named for the year that the neighboring Wentworth Mansion was built, Circa boasts a wine list that provides diners with well over 200 selections. With starters such as confits of quail or duck with hazelnut-blackberry vinaigrette, or morel mushroom and Brie strudel on warmed asparagus cream, the experience is not to be forgotten.
