 EDITOR REVIEW: UPTOWN. When Zinc made its Uptown debut in 2004, its approach to American classics like chicken, fish and steak was nothing short of a breath of fresh air. That's not to say that the kitchen endeavors to totally recreate tried and true dishes, but what it does seek to do is give them a few unexpected turns. Ergo, your Alaskan halibut may come with a side of grits, or your salmon may have horseradish crust.
