ALBANY PARK.   Simple interior lines and a pared-down menu characterize Chiyo's recent renovation of the former Matsumoto. With a new name come new offerings, like shabu-shabu, a cook-your-own adventure where your choice of meat is prepared at table in steaming broth. Try Yose-Nabe – a combination of shrimp, scallops, fishcakes, vegetables, and beancurd in seafood broth – for a Japanese take on bouillabaisse. My husband & I love this place! I always get the house salad and they have the best spicy tuna rolls EVER! I love their super white tuna sushimi syle (not on menu - just ask fot it) and don't miss out on their cold saki selection. The service is excellent. I am not sure of the owners name, but she is sooooo sweet!! They also own Chicago Kalbi (just east of this restaurant) and their food is great too!
