I am more of a Porterhouse kind of guy. I just have not had luck with the ribeyes at many of the well renowned steakhouse. So when my Rosebud server named Jay, talked me into to the "Chicago cut" Bone-in ribeye I thought, "OK, why did I do that?" So the ordered line up for dinner was: The Escargot and "Mini Steakhouse Cheeseburgers followed by my waiters recommendation: the bone-in ribeye and creamed spinach." The escargot arrived first. prepared much in traditional way, escargot in garlic/shallot butter, although this one had breadcrumbs broiled over the top, pretty much standard fare. Then the three Mini Steakhouse Cheeseburgers arrived. The three bugers were served on a small brioche bun topped with caramelized onions, cheddar cheese slice, a very fresh and crisp slice of pickle. The meat patties where about 3" diameter and and INCH thick! They were mini in size but not in flavor! This was the best burger I ever eaten in a restaurant. Great meat and very, very juicy. I go back, just for the burger! The whole time I am enjoying the apps I can't help but think, “Why did I let Jay talk me into the ribeye? I should have ordered the porterhouse." But when the ribeye arrived, I was singing a different tune. It was perfect; flavorful, juicy, and cooked to my perfect doneness. It was plated ornamentally with the bone end resting a top a roast veal shank marrow filled bone. This was a very nice touch. The marrow, what I like to call "butter of the gods," is great spread on bread and toast points brought to the table earlier. The steak was without a doubt the best ribeye I have ever tasted. Rosebud Steakhouse and her identical twin sister Rosebud Prime are outstanding. Steaks were fantastic and service was great! This is must stop for all carnivores.
