CHRISTIANSHAVN. Set on the docks in a large, 18th-century warehouse, this restaurant shares space with government offices from Greenland and Iceland. These nations also share culinary traditions, which Noma unites beautifully. Authentic ingredients from the North Atlantic are fashioned into wonderful, unusual dishes and served in a dining room as pale and spare as the Arctic itself. Among the dishes you'll find are oysters, musk ox fillets, Swedish eel pâté, local langoustines, and Danish blood sausage. Incredibly popular and innovative. Reservations recommended. Business dressy attire.
