WEST CARROLLTON.   For over a decade, this popular restaurant has been serving a diverse menu of Spanish, Mediterranean, and Caribbean dishes. Diners are wowed by the establishment's authentic Latin ambience and its regularly changing menu, which offers a new theme each month. Every Thursday night is paella night, when chef-owner Herman Castro shares his Colombian culture and culinary talents with customers. On Wednesdays, a ceviche bar is prominent. I have been here 2x already and I will definitely be going back. I have ordered off of the tapas menu both times and i LOVE the sweetened corncakes with cheese - delicious. The waiter I had the second time was great (right at 5pm on a Friday) while the first time I went (8pm on a Thursday) the service was painfully slow. I would recommend an earlier seating rather than later.
