HIGHLANDS. Seemingly extracted from a 19th-century novella, this remodeled Victorian home serves as an elegant restaurant and is regarded by many as Denver's grande dame of fine dining. Dishes are fashioned from the freshest ingredients – bouillabaisse and herb-crusted halibut lead the way. The ambience promises relaxed, enjoyable meals, and outdoor dining is especially pleasant. The restaurant is primarily a special-event venue with limited public seating, so reservations are a must.

CAPITOL HILL. Neighborhood folks place laurels at the feet of this New American eatery, which is known almost as much for ambience as for its innovative menu. A handful of conservatively appointed tables dot the intimate dining room; soft lighting and professional, unobtrusive service complete the elegant scene. Featured dishes twist traditional American favorites, and the results include macaroni and cheese with lobster and Maple Leaf Farm duck with balsamic jus. Since seating is limited, reservations are a must.

CAPITOL HILL. Set among the Victorian houses that lend Cap Hill so much charm, Potager ("kitchen garden" in French) has developed a reputation for delicious creations that employ locally-grown and often organic ingredients. Dishes change frequently depending on what's fresh and available; try to sample the foie gras flan, a rich custard with dried fruit compote, as a starter. Entrees like wood-fired lobster on a bed of mole sauce and roasted, lemon-infused chicken have won rave reviews.

DOWNTOWN. James Beard-award-winner Kevin Taylor's eponymous eatery is a favorite with local romantics and critics, who heap high praise on the innovative New American fare and cozy confines of the elegant Art Deco-style dining area. Starters like black truffle-and-roasted garlic ravioli or French foie gras serve to whet the appetite, setting the stage for Broken Arrow venison au poivre with roasted pear and butternut squash, or roasted Scottish salmon with asparagus and nicoise mashed potatoes. A superb, "Wine Spectator"-recognized wine list helps round out the experience.

UPTOWN. Enjoyed by Denver's suave uptowners, this fine dining restaurant sports a bit of a Kubrick design scheme with stark white walls, chrome chairs, contemporary artwork, and an industrial loft area. While duck salad or a cup of homemade soup serve as ideal appetizers for some, Strings' Dungeness crab cakes and carpaccio with mustard aioli add a touch of spice to any meal. Featured entrees include grilled Colorado lamb chop with peach and onion cobbler, roasted calf's liver with 17th Avenue chive beurre blanc, and basil ravioli stuffed with lobster mascarpone.
