TUSAYAN.   Western style, both in decor and cuisine, sets the scene at this hotel restaurant. Plenty of seating ensures quick turnover, and overhead, in the soaring ceiling space, televisions play video of the Grand Canyon. Plus, performers regale diners nightly with Native American dances and cowboy tunes. The menu places a premium on grilled steaks, although you'll also find chile-crusted lamb chops, grilled trout, smoked pork loin, and Southwestern seafood stew.
