SEVEN MILE BEACH.   This replica of Christopher Columbus's "Nina," a 17th century Spanish galleon, is one of the best ways to get in a Caribbean frame of mind. Everything about the "Jolly Roger" looks, feels, and sounds authentic, from the hand-carved figurehead and nine functional sails to the oak-and-cypress construction and modern-day swashbuckling crew. The Pirate Cruise explores the island's coves and hideaways and includes a swim break. Sunset Cruises last 2 ½ hours and come complete with free appetizers, your choice of marinated beef or Caribbean red snapper, and live music. Private charters are also available.
