3. Cimboco: A Caribbean Cafe

SEVEN MILE BEACH.   An authentic Caribbean café, Cimboco borrows its name from the Cayman's first locally built motorized sailboat. This colorful eatery's forte is traditional Caribbean cuisine, and the friendly waitstaff and an open-plan kitchen give the inside a homey feel. Specialties include the "Roti" Sandwich (flatbread served with Caribbean curried vegetables), Jerk Chicken Sandwich with melted provolone and garlic aioli, Seashells, and Red Sauce and Seasoned Ground Lamb with fresh tomatoes and mushrooms.
