WAN CHAI.   A sophisticated lounge above the One-Fifth Grill (where, incidentally, you can get a great meal – try the mixed grill with beef medallion, Boston lobster and seared goose liver). High ceilings give 1/5 a wide-open spacious feel, rare in space-challenged Hong Kong, and the overall vibe is cool and laid back. DJs spin a funky mix of soul and R&B, keeping the volume reasonable so conversation isn't hindered.
