CAUSEWAY BAY. Closed for renovations until late 2009 When uber-cool, Philippe-Starck-designed boutique hotel Jia opened in 2004, it was to international acclaim. The launch of the hotel's restaurant, Opia, caused just as much commotion the following year, and it was dubbed the best restaurant in Hong Kong by the South China Morning Post, the city's main English-language newspaper. It's certainly a top destination for the city's style-conscious, making reservations essential. The food is modern Australian "freestyle" cuisine, à la Down-Under chef Teage Ezard. Indeed, current chef Dane Clouston trained under Ezard, and now spends his time whipping up imaginative dishes that incorporate lots of seafood, Wagyu beef, and Asian flavors like chilies, ginger, soy and Chinese five-spice.
