CAUSEWAY BAY. Ambience has become so important to the success of a restaurant. Drab décor and fluorescent lights just don't get it. Water Margin, like its siblings in the Aqua Restaurant Group, takes pains to create just the right mood. The entrance is a replica of a traditional Chinese market, complete with a display of fresh vegetables, while the interior draws you in with deep dark woods, candlelight, and a ceiling hung with red Chinese lanterns – lots of them. The food marries age-old recipes and ingredients with modern Asian flair and a hint of fusion. On the lengthy menu you'll find Northern Chinese cuisine with plenty of spice, such as beef or chicken "in a sea of Sichuan red peppers." Classics include sweet and sour eel, tea infused duck and roasted pork ribs with fennel seed. There are several vegetable dishes, but many of them aren't actually vegetarian – ask first!
