CENTRAL.   The Mandarin's now famous 2006 refit established some new dining options, the most notable of which is this fine effort from three-star Michelin chef Pierre Gagnaire. The restaurant bathes diners in contemporary luxury and rewards most with a glorious view out over Victoria Harbour. The frequently changing menu has all the hallmarks of French cuisine – foie gras, refined sauces, the freshest vegetables and the tenderest meats, all prepared and presented most artistically.
