ALA MOANA. Folks in the know clamor to this fabulous Thai restaurant for authentic cuisine in a comfortable environment. Family-owned Chiang Mai (named for a city in Thailand) serves classic pad thai and a wealth of other healthy dishes composed of seafood, chicken, beef, and fresh vegetables. Curries, in particular, are delicious, and you can request the level of heat you're willing to try. Locally-grown peppers provide the spice, so choose wisely.

WAIKIKI. This elegant venue regales diners with top-quality Chinese cuisine, making for an ideal evening out. The menu, which touches on Szechuan and Cantonese culinary styles, capitalizes on fresh ingredients and flavorful sauces. Curried lobster, for instance, is a house favorite, as is Imperial Beggar's Chicken, which gains tenderness through clay pot-cooking and requires an advance request. You'll also find dishes featuring pork, shrimp, duck, and beef; prix fixe dinners are available as well.

KAIMUKI. A bit out of the way from Honolulu's main drag, this Vietnamese favorite doesn't lack for business. Rather, patrons seek it out for vegetable-laden dishes, which are both flavorful and good for you. Pho soup also has a siren's call that can be satiated only by an interlude of slurping noodles and herb-tinged broth. A great variety of other dishes also makes for prime mealtime fare, including seafood, curries, and filled pastries. Enjoy the lively atmosphere when you're there.

CHINATOWN. Clean-lined and accented with colorful artwork, Indigo makes for stylish dining in a cluster of historic buildings. The menu updates classic Chinese cuisine and includes dim sum selections, most notably savory goat cheese wontons and lobster potstickers. For the main course, look to such incredible fare as Mongolian lamb chops, miso-grilled salmon, tea-marinated pork tenderloin, and a Siamese seafood cioppino. Outdoor dining on the back lanai is much-coveted but may demand a wait at the bar.

WAIKIKI. Considered one of the country's top Thai restaurants, Keo's has been frequented by celebrities of all sorts and is a perennial local favorite. Ingredients are always fresh, and many are grown at the restaurant's own farms. A good proportion of dishes takes advantage of the island's seafood as well, and the curries are fantastic, well-balanced and addictive. So is Evil Jungle Prince, the house dish, which features basil, hot peppers, coconut milk, chicken, and lemon grass. Delicious!

KAIMUKI. Garlic lovers, rejoice! Almost everything at this popular restaurant is prepared with the proverbial "stinking rose," although the menu isn't quite as revolutionary as you might imagine. In fact, the restaurant proves just how prolific the seasoning is. Try seafood, lamb, salads, dips, and pastas under its influence, or sample steak cooked on a hot stone for a touch of novelty. Portions are substantial, so come hungry, and don't forget to order a bottle of wine from their carefully-considered list.

CHINATOWN. If you're the type that likes ferreting out fantastic neighborhood eateries, know that your work is already done here. This diminutive restaurant serves up some of the city's best, most authentic Vietnamese cuisine, and the menu is prolific. Pho lovers will find the noodle soup particularly enticing, as will fans of saimin, which it resembles. The menu also boasts an array of seafood entrees, savory appetizers, and a few unexpected surprises as well. You may have to wait a bit to get in, but the delay's worth it.

Like Honolulu's other popular Chinese restaurants, it does dim sum and seafood exceptionally well, as proven by its nightly bustle. Satiate yourself on dumplings, pork buns, and all the other tempting nibbles, or opt, instead, for an ample entree featuring fresh island seafood and a fragrant, herb-tinged sauce.

WAIKIKI. A gracious dining room, adorned with soothing colors, Asian art, and tropical flowers, greets patrons at this elegant establishment. Noted for its contemporary Thai cuisine, Singha places a premium on fresh meats, seafood, and produce, a fact which satisfied diners much appreciate. Duck breast, stir-fries, curries, and noodle dishes also prove tempting, and carefully crafted sauces complement each dish beautifully. Each night, too, dancers in traditional garb perform to the delight of diners. A don't-miss experience.
