MOILIILI. Some of the island's most accomplished cuisine is served at this small, intimate restaurant. Under the masterful command of Chef Mavro, French technique pairs with Hawaiian ingredients to create culinary magic. Onaga (snapper) baked in a salt crust is a house specialty, although you'll be hard-pressed to pass up Keahole lobster with white asparagus risotto, roasted lamb loin, and crisp Peking duck breast. Prix fixe menus with three, four, and six courses are terrific values and can be coupled with wine selections as well. Give yourself over to this expensive, incomparable experience.

WAIKIKI. This vibrant restaurant shakes things up a bit with its curious marriage of Chinese and Italian cuisines. Many dishes maintain their individual heritage (saltimbocca di vitello, whole steamed fish with soy-ginger sauce), although fusion entrees include Chinese roast duck canneloni and hot bean salmon alla Siciliana. Prix fixe menus are also available, and desserts range from tiramisu to lychee sorbet. Adventurous diners will be pleased to explore the novelties and choose their favorite dishes.

ALA MOANA. Compadres' ebullient atmosphere comprises half its appeal, thanks to merry patrons and comfortable surroundings. Folks of all sorts congregate at the bar and restaurant to hang out with friends and indulge in the spicy cuisine. A host of traditional dishes ably takes care of purists while more experimental folks clamor for fish tacos and other island-influenced fare. Regulars recommend the carnitas (slow-cooked pork) for a succulent, true taste of Mexican cuisine.

DOWNTOWN. The tapas craze comes to Honolulu in the appetizing form of Hiroshi Eurasion Tapas, the brainchild of chef Hiroshi Fukui. Part of the D.K. Restaurants family, this trendy spot distinguishes itself with inventive fusion cuisine, blending the familiar flavors of Europe with exotic flavors from Asia. Tapas range in price from $8 to $16 and include foie gras sushi in teriyaki glaze and seared sea scallops with crispy salami and cilantro pesto. Regularly-sized entrees can also be had – miso yaki butterfish is a favorite.

KAHALA. If you're the sort who likes a touch of culinary drama, keep an eye on the open kitchen at this striking restaurant. Wood-burning ovens, a grill, and sizzling woks provide spectacle as the staff prepares roast fish, grilled rack of lamb, and stir-fried lobster. Quality, however, isn't lost amid the machinations; rather, everything is first-rate, especially crisped whole island fish, osso bucco, and ahi tuna in its many incarnations. Terrific views complement the experience, as does an attentive staff. Pricey but worth the expense.

WAIKIKI. If you choose a single, prodigal splurge during your time on Oahu, this sublime restaurant is an ideal choice. Refined and elegant, the dining room sets a quiet scene for impeccable southern French cuisine, colored with Hawaiian ingredients. Everything conspires towards culinary luxury, and fresh fish, lovingly prepared and dressed with relishes and confits to bring out the flavor, are amazing. Other stunning options include roast duck, veal and lamb chops, Angus beef, and lobster.

KAHALA. Casual and unpretentious, this well-attended eatery serves up some of the best Middle Eastern food you'll find. Everything is fresh and homemade, from fish souvlaki to tzatziki sauce. You'll also find grilled lamb, refreshing tabbouleh salads, and hot, satisfying falafel. The ambience isn't incredibly refined, and a parking lot comprises the outdoor views, but you'll forget about the surroundings once you've tasted the savory – not to mention, affordable – fare. N.B. If you want wine or beer, you'll have to supply your own.

KAPAHULU. Inside, this delicious restaurant stays true to its name with Egyptian-styled decor. The menu, however, is a bit more broad, embracing the entire Middle East in its culinary reach. Beef and chicken shawarma hint at the options, which also include spanakopita, dolmades, and moussaka (the lush eggplant casserole). Hummus, falafel, and lamb kebabs also make a welcome appearance. An affordable, well-attended lunch buffet draws patrons in throughout the week, and nightly belly dancers add a note of exoticism to the evening meal.

CHINATOWN. This comfortable, unassuming eatery is one of Honolulu's favorites for authentic Indian cuisine. Family-run Zaffron offers wonderful food at affordable prices and has lots of regulars who appreciate the spicy dishes and terrific buffets. Vegetarians are constantly pleased by meatless selections while tandoori chicken, lamb samosas, biryanis, and curries accommodate those with a broader range. Chai tea and nan bread also contribute to a traditional Indian experience.
