JACKSON.   Eclectic is the operative word at Nikai Sushi, where the fish is flown in fresh every day, the sake is perfectly chilled (or warmed, as the case may be), and the scene is hip and energetic. Friday nights are especially fun – DJs provide the music, the bar concocts creative cocktails, and the crowd doesn't thin til the wee hours. If it's sushi you're after, Nikai is sure to please. Standouts on the menu include unique rolls such as the Dagwood (tempura shrimp, avocado, blue crab, and tuna) and the Funky Lobster (tempura fried spicy lobster and wasabi aioli).
