JACKSON.   Candlelit and intimate, the Blue Lion is ideal for special occasions or romantic dates. Creative starters include Santa Fe duck cakes with chipotle mayonnaise, and havarti and sautéed mushrooms en crôute. Equally inventive entrees change with the seasons, but you'll find dishes such as Thai lobster risotto, plenty of pasta options, and a choice of fresh fish prepared with pineapple chile glaze, herb butter, or Cajun spices. Grilled meats feature prominently as well – try a mixed grill of elk tenderloin and Idaho red trout, or the Southwest-spiced rib eye with tomatillo sauce and ancho chile sauce.
