ST-JOSEPH-DE-LA-RIVE.   Using a process more than 300 years old, the skilled craftspeople at the Papeterie St-Gilles produce cotton paper out of local leaves and flowers. If you look closely at the paper, called "Grand Luxe," you'll notice that each sheet bears a distinctive watermark – the unmistakable image of Saint Gilles.
