HENDERSON. Exhibiting all the charm you'd expect of a bistro that specializes in an amalgam of French and American cuisines, Zinc is eminently warm and accommodating. Boasting lake views, it's an ideal spot for indulging in dishes reminiscent of New Orleans, including jambalaya, étouffée, po'boys, and gumbo. Other choices range from chicken piccata to crab cakes and duck a l'orange. Adding to the atmosphere is live zydeco music and an adjacent bakery that emanates the aroma of baguettes and beignets.

THE STRIP. Opening to much fanfare in 2003, this eponymous restaurant brings to the Strip the skills of its accomplished chef and a quintessentially Californian focus on freshness. The warm, sleek space promises elegant dining, and the menu offers delights like wood-fired pork loin, slow-roasted Muscovy duck, and wild salmon, all accompanied by inventive, pristine side dishes. The quality of ingredients ensures that flavors all around are exquisite. West Coast wines are the oenological standard.

Choose from a wide selection of burgers, including those fashioned from Black Angus, turkey, vegetables, Colorado lamb, and even Kobe beef. Then smother your favorite with any combination of toppings you can think of. Sliced zucchini, grilled lobster, and even pan-seared foie gras are some of the more unusual choices, but traditional condiments are available too. Perfect for lunch or take-out any time of day.

THE STRIP. Well-known chef David Burke sets the tone at this, his eponymous restaurant run by chef Troy N. Thompson. Culinary innovation and presentation are hallmarks, meshing beautifully with the sleekness that runs through decor and service. The menu reconceives well-loved items, giving them new life in dishes like pretzel-crusted crab cakes, "crisp and angry" lobster cocktail, a cheesecake lollipop tree, lamb chops accented with blue cheese, and roasted duck breast and seared prawns. An open kitchen puts all the action right on stage, and a large wine room showcases dinner accompaniments.

DOWNTOWN. Although it doesn't fall into the chi-chi category of chef-run Las Vegas establishments, Hugo's is a longtime favorite. Salads are prepared table-side by an attentive waitstaff, and popular main-course options include perfectly prepared steaks, seafood, lamb, duck, and chicken. However, delectable desserts are the real treat, so save room. Fresh, chocolate-dipped fruits and a pastry cart laden with cheesecakes, strawberry tortes, and luscious Black Forest cake are diet-breaking prospects.

SOUTH LAS VEGAS. Michael's offers a reprieve from the fast-paced environment just outside its doors. Upon entering the velvet and mahogany-dressed room, patrons are quietly but conscientiously accommodated. The fare, although pricey, is wonderful, and the menu features rack of lamb, sauteed sea bass, veal saltimbocca, and broiled steaks and lobster. If you're treating yourself to a few excellent meals in Vegas, Michael's should certainly be on your list.

THE STRIP. Shimmering, silvery NOBHILL pays due homage to its namesake city not only in classic San Francisco dishes but in the ingredients themselves, most of which are shipped in from the City by the Bay. As a result, diners can revel in a North Beach cioppino, dazzling lobster pot pie, and Niman Ranch veal chop. Accompanying all are the restaurant's fresh bread and an assortment of whipped potatoes – both capable of provoking immediate loyalty. Unusual cocktails and superb wines also distinguish the much-awarded establishment.

THE STRIP. Most endeavors affiliated with the Wynn immediately turn to gold, and it's no different with this praiseworthy establishment. Graced by views of the pool and appaluded for its somewhat secluded setting, Tableau enjoys a south-of-France impulse that shines through in dishes like roasted chicken with truffled salsify and chanterelles. Similarly delicious are pancetta-wrapped monkfish and roasted rack of lamb with chestnut flan. Fabulous tasting menus are a popular option, and there's even a vegetarian version. Early on, breakfast and lunch were available only to hotel guests; that's no longer a restriction.

THE STRIP. Located a mere stone's throw from the Strip, this elegant eatery is the Four Seasons' signature restaurant. The dining area sports a Mediterranean setting: flower-adorned tables, potted palms, and cream-painted archways. French doors open to enchanting desert breezes and lovely views of the garden and pool. Especially at night, the dining terrace is ideal if you yearn for more romantic environs. The menu offers savory risottos and pastas, along with grilled beef tenderloin, red snapper, and veal piccata. Afternoon tea must be booked in advance, and reservations are required for Friday and Saturday dinner. There's also a weekend breakfast buffet.
