THE STRIP. Fresh European seafood distinguishes this addition to the Wynn's stable of superior dining establishments. Unusual varieties of fish from the Mediterranean are carefully charcoal-grilled or roasted, then served with handmade pastas and veggies like garlic-roasted bell peppers and sautéed zucchini. If fruits of the sea aren't for you, the pan-seared, 18-ounce rib-eye in sangiovese wine sauce awaits. Take time to appreciate your surroundings as well as your food – the winding staircase and crystal chandelier complement beautiful views of the lake.

THE STRIP. This offshoot of the Fort Lauderdale mainstay prides itself on preparing Italian dishes in old-school style. That means, using fresh ingredients bought that day and making sauces a little at a time, as they're ordered. The difference shows in the place's long lines. And while the food is classic, the setting boasts large plasma-screen TVs and, later in the evening, owner Steve Martorano manning the DJ booth. The South Philly native even serves an authentic cheesesteak alongside items like veal picatta, lobster franchese, chicken cacciatore with sausage, and lots of perfectly cooked pastas.

THE STRIP. The Vegas cousin of NYC's Fiamma wins big in Sin City. Unexpected ingredients, fresh handmade pastas, and innovative desserts breathe new life into classic Italian dishes. After being seated near the wooden, contour map-like curves of the Wave Wall, partake of a delicious antipasto; gamberoni – rosemary-grilled prawns with charred tomato vinaigrette – and calamari are two flavorful options. Move on to gnocchi in Maine lobster ragu or the simple but divine fresh-cut spaghetti with braised Kobe meatballs in pomodoro sauce. Dessert is mandatory; try crispy amaretti doughnuts with chocolate ganache, banana cream, and berry jam.

DOWNTOWN. This romantic Mediterranean-themed eatery is a haven for those wishing to escape the bright lights and constant buzz of the Strip. The members of the charismatic waitstaff tend to break into traditional Italian songs throughout the evening, adding a certain Old World charm to the place. Northern Italian staples are the specialty here, with entrees including the likes of grilled veal chop with roasted peppers and mushrooms, Arrabiatta-style red snapper, and lobster tail Milanese on grilled zucchini. The desserts, most of which are nothing short of heavenly, deserve special attention, particularly the chocolate biscuit caramel mousse.

THE STRIP. Another example of Vegas's penchant for having its own versions of some of America's best restaurants, this outpost of the East Harlem original keeps the same great food and adds in views of the resort's pool, not to mention a bocce court. Most folks choose to dine in one of the two rooms that recreate the NY location, soaking in the "authenticity." Wherever you dine, you'll be a fan of osso bucco with saffron risotto, double cut Colorado lamb chops, salt-encrusted whole Mediterranean sea bass (filleted tableside), and veal parmigiana. Lots of flavor-packed pastas also suit folks to a T.

EAST LAS VEGAS. At Sergio's, faux columns, silk greenery, and wall murals are meant to evoke ancient Rome; while the decor isn't fully authentic, patrons agree that the food certainly is. The amiable waitstaff is happy to start you off with salmon carpaccio or fried calamari with tomato sauce. Pasta entrées, served with your choice of minestrone soup or house salad, include penne alla vodka and fettuccine with porcini mushrooms. Baked pastas, chicken, beef, veal, and fish dishes are also served. Conclude your dining experience with a shot or two of Sergio's famed espresso.
