ST. JAMES'S. Open since 1742, Wiltons has established itself as one of St. James's most consistent restaurants. Mustard-yellow walls, dark wood accents, intimate Pullmans, mahogany tables, and paintings of sporting scenes distinguish the interior, and Wiltons certainly plays the Old World gentry card to perfection. Jackets are required, and gentlemen must wear them at all times. Of course, abiding by the rules is well worth the reward: fresh lobster, crab, oysters, smoked salmon, and gull's eggs served with incredible seasonal produce.
