GARDEN CITY.   Signature restaurant of one of Long Island's more respected hotels, Polo gets high marks for its contemporary American cuisine and elegant, almost regal setting. Dark wood accents, original artwork, and silk-covered walls give the main dining room timeless elegance, and each table is smartly appointed with white linens and fresh-cut flowers. As for the menu, featured entrees include bamboo-steamed salmon and nine vegetables, parsley risotto with Provençal eggplant and Vidalia onion, and pistachio-crusted Arctic char with salsify and arugula.
