SOUTHOLD.   Classic simplicity underscores the dining room of this charming Southold inn, where the New American fare rivals any Manhattan dining experience you might have had. Executive Chef Gerry Hayden places strong emphasis on the use of locally grown ingredients, and his creations are, indeed, sinfully original. Representative main courses from the dinner menu include sautéed Rhode Island wild striped bass with sweet pea and green asparagus risotto, pan-roasted Long Island duck breast with glazed tart apricots, and Montauk black sea bass with shiitake mushrooms.
