CORRIDOR.   Chicago Chef Charlie Trotter's upscale resort restaurant C is one you won't want to miss. The menu changes daily, usually featuring the freshest local seafood plus meat and game, prepared with a deft hand and Continental-French sensibility. Unusual dishes have included marinated cabrilla with osetra caviar, sugar snap pea puree and lemon mint cream; pork loin with morels, caramelized pearl onions, leek confit and roasted garlic-potato flan; and grilled beef tenderloin with chipotle roasted organic beets. The world class wine list has over 1800 selections, and the stylish interior (by designer Adam Tihany) offers stunning views of the Sea of Cortez.
