CABO SAN LUCAS.   Named for the flavorful red wines produced only in the Verona region of Italy, Amarone is one of the most authentically Italian restaurants in Los Cabos. The Italian owners and chefs insist on the highest quality ingredients, many of which are imported from Italy. The northern Italian menu features plenty of grilled meats, delectable house-made pastas and robust sauces. Some dishes, such as Ravioli di Aragostan (lobster stuffed ravioli with shrimp sauce), take advantage of the abundance local seafood. For dessert, sample an Italian classic such as tiramisu or cannelloni, or go for the simple yet decadent gelato.
